Description:

Kugel means 'pudding' either sweet or savory. In German, kugel means 'ball', indicatging the

shape of the pot 'kugel-topf' in which it was baked. Kugel is similiar to corn bread and some

cheesecakes. It is moist, sweet and tangy. From, "A Taste of Romania", by Nicolae Klepper

Ingredients:

1/2 cup yellow cornmeal

1/2 cup flour

1 Tsp salt

1 Tsp baking powder

1/4 cup creamy cottage cheese

3/4 cup plain yogurt

3/4 cup sour cream

2 Tbsp butter, softened

1/2 cup granulated sugar

2 eggs, separated

Directions:

Sift cornmeal, flour, salt and baking powder into bowl

In a separate bowl, mix cottage cheese, yogurt, and sour cream.

Mix 1/4 cup sugar with butter. Add egg yolks and beat to a smooth cream.

Transfer the creamed mixture into a large bowl. Stir in cheese mixture and dry ingredients,

little by little, alternating each time. Mix until batter is smooth.

Grease a 9 inch pie oven dish. Preheat oven to 375 degrees Farenheit.

In a mixer bowl, mix remaining sugar with egg whites. Wip mixture until stiff. Then fold egg

white mixture into batter.

Pour batter into oven dish and bake about 45 minutes or until kugel is nicely browned and a

knife inserted in the center comes out clean.

Serve warm, spooning some sour cream on it, or cold, with fruit salad. It is also delicious as a

coffee cake.
